We learn a lot about a people and culture by the foods they eat; We could even say food reveals the most. The European mentality of shopping daily for the perfectly ripe Camembert or basket of figs is still the norm in many cities and rural towns. Therefore, the food we offer is reflective of the region we’re visiting, and we work with chefs who don’t reveal their menus to us until a week or so out, as they all are dependent upon what’s available in the markets.
